Healthy Lunch Ideas

Hey y'all! Last week I shared some healthy breakfast options and today I'm sharing some healthy lunch ideas. Here lately I've been doing a lot of meal planning. I usually make all my meals for the week on Sunday afternoon. I love how easy it makes packing my lunch through the week because all I have to do is grab it from the fridge and go.
My meal prep usually looks something like this. I just chop a ton of different veggies, mix some olive oil and seasonings in (I like Italian seasoning with a little salt and pepper), and bake on 450 degrees for about 45 minutes. I usually cover the veggies with some aluminum foil after the first 20 minutes in the oven. I usually try to make enough for Chase for the week as well.

Veggies, fish, and a little bit of brown rice... SO good.


More veggies with baked chicken, salmon, and tilapia. I usually alternate between those three meat options. I try to season with different things so that I'm not eating the exact same thing every week.

Although I've tried to meal plan as much as I can here lately, there are some Sundays when I get home from church and I'm just not feeling it. During the weeks when I don't meal plan, my lunches look something like this. Homemade guac with organic veggie and flaxseed tortilla chips, some pineapple, and a cheese stick. Sometimes I'll bring a rice crispy treat or granola bar as well to have as a little afternoon snack on days that I'm working after school.
