This Week's Menu

Happy Wednesday Y'all! Today I'm sharing some of the meals that are on our menu for this week. One of my goals for the month of November was to be healthier, which of course includes eating healthier. I usually do great when it comes to eating a healthy breakfast and lunch, but struggle when it comes to making a healthy dinner that both Chase and I like, so I've been trying to make more health-conscious decisions when it comes to cooking dinner here lately. When I cook I usually make enough for us to have left overs the next night, and I usually take Friday, Saturday, and Sunday off. This way, I'm only having to cook two or three times a week
Here's what we're eating this week:

Broccoli Cheddar Soup with Fresh Veggies

Ingredients:
4 Cups of Fresh Broccoli (Chopped)
1 Cup of Shredded Carrots
1 Cup of Red Potatoes (Chopped)
1 Yellow Onion (Chopped)
2 and 1/2 Cups of Low-Sodium Chicken Broth
2 oz. of Low-Fat Cream Cheese
1 12oz. Can of Evaporated Milk
1 Block of Sharp Cheddar Cheese (Grated)
Instructions:

1. Throw chopped broccoli, potatoes, onions, carrots, chicken broth, and cream cheese in the crock pot and cook on high for 3-4 hours or low for 6-7 hours.

2. Once all veggies are cooked, add in a 12 oz. can of evaporated milk, and put 3/4 of the veggies with milk in a food processor blender. Return veggies to crock pot, and add in your block of grated cheddar cheese. Let cook on high for 30-minutes to an hour.
SO GOOD!

Chicken/Cream Cheese Taquitos 

Ingredients:
1 Package of Boneless/Skinless Chicken Breasts
1 8oz. Package of low fat Cream Cheese
1 Can of rotell
1 TBS of Chili Powder
1 TSP of Garlic Powder
1 TSP of Ground Cumin
1 Cup of Shredded Mexican Cheese
8 Tortilla Shells

Throw chicken, rotell, spices, and cream cheese into the crock pot, cook on low for 6-8 hours or on high for 4 hours. When chicken is cooked, shred it and set it aside.
Put a little bit of shredded cheese on each shell, and heat in a pan for about 60 seconds.
After you remove the shell from heat, put chicken mixture and more cheese in each shell and roll tightly. Top with cheese, and bake on 400 degrees for about 10 minutes, or unit cheese is melted. This was my first time making these and we loved them.
